Helado de naranjitas confitadas y mazapán con chocolate

 






Comencé a limpiar mi congelador, y encontré naranjitas confitadas que hice para Navidad, así como a Mazapan. Quería hacer tarteletas, pero mi hija que ama las naranjitas confitadas y los chocolates, me pidió helado. ¡Terminó siendo un delicioso helado! ¡No puedo esperar para hacerlos de nuevo!

Helado de naranjitas confitadas y mazapán con chocolate

Natilla

2 huevos

350 gramos de crema (35%)

150 gramos de leche

3 cucharadas de leche en polvo

80 gramos de azúcar

300 gramos de mazapán

250 gramos de naranjitas confitadas picadas en trozos pequeños

1/2 cucharadita de esencia de almendras

Mezcle los huevos, la crema, la leche, el azúcar y la leche en polvo. Coloque en una olla a fuego medio bajo hasta que se espese. Dejar de lado. Cuando esté caliente, agregue el mazapán y mezcle bien. Una vez que esté frío, agregue la esencia de almendras y las naranjitas confitadas picadas. Coloque la mezcla en su maquina de helados. Distribuirlos en moldes de helados. Congelarlo durante 24 horas.

200 gramos de chocolate con leche

20 gramos de mantequilla de cacao

Derréelos a ambos en Bain-Marie a baja temperatura. Cubra cada helado y colóquelos nuevamente en el congelador durante 1 hora. ¡DISFRUTAR!

Orangette and Marzipan Ice Cream with Chocolate






I started to clean my freezer, and I found orangettes that I made for Christmas as well as marzipan. I wanted to make tartelettes, but my daughter that loves orangettes and chocolates, asked me for ice cream. It ended up being a delicious ice cream!! I can't wait to make them again!!

Orangette and Marzipan Ice Cream with chocolate

Custard
2 eggs

350 grams of cream (35%)

150 grams of milk

3 tablespoons of milk powder 

80 grams of sugar

300 grams of marzipan

250 grams of orangettes chopped in small pieces

1/2 teaspoon almond essence

Mix the eggs, cream, milk, sugar and milk powder. Place it in a pot at low medium heat until it thickens. Set aside. When it is warm, add the marzipan and mix it well. Once is cold, add the almond essence and the chopped orangettes.  Place the mixture in your ice cream maker. Distribute them in ice cream molds. Freeze it for 24 hours.


Chocolate layer

200 grams milk chocolate

20 grams cocoa butter

Melt them both at bain-Marie at low temperature. Cover each ice cream, and place them again in the freezer for 1 hour. ENJOY!

Jardin y Mayonesa con huevos cocidos

   


Estamos en plena primavera aquí y disfrutamos del clima cálido... nuestro arbol de melocotones está lleno de flores y tengo espinacas que puedo cosechar cuando quiera.


Este año hice un experimento. Leí en internet (no recuerdo dónde) que si pones una bobina de cobre, aumentas la producción de vegetales en tamaño y cantidad. Lo intenté y parece que mis espinacas son más grandes.

 Usé la misma tierra que el año pasado, no la fertilicé antes de sembrar las semillas y usé las mismas semillas que el año pasado ya que todavía tengo semillas de ese paquete. Intenté mantener cambios mínimos respecto al año pasado para probar esta adición de cobre, y parece que está funcionando. ¡Nunca comí espinacas tan grandes!

Ahora vamos a la receta. Tuve que hacer blinis salados, pero algunos de mis invitados eran alérgicos a los huevos crudos. Por lo tanto, tuve que hacer una mayonesa especial para que todos disfrutemos de los blinis. Encontré una receta con huevos cocidos que probé. Tengo que admitir que sigo prefiriendo la mayonesa con huevo crudo, pero ésta es un buen sustituto.



Mayonesa con huevos cocidos


4 huevos duros

4 cucharaditas de aceite de oliva

2 cucharaditas de jugo de limón

sal

pimienta

agua según sea necesario

Opcional: mostaza, ajo, hierbas.


En un recipiente coloca los huevos duros cortados en cuartos. Agrega el aceite de oliva, el limón y la sal. Con una batidora de mano de inmersión, mezcle bien, agregue agua según sea necesario para obtener la consistencia deseada. Si lo desea, agregue ajo, mostaza o hierbas. Úselo como mayonesa real. ¡DISFRUTAR!

We are in full Spring here, and enjoying the warm weather.....our peach tree is full of flowers, and I'm having spinach that I can harvest when I want.


I made an experiment this year. I read in the internet (I don't remember where) that if you put a coil of copper, you increase the production of vegetables in size and quantity. I gave it a try, and it seems that my spinaches are bigger.

 I used the same soil as last year, I didn't fertilize it before seedling, and I used the same seeds as last year since I still have seeds from that package. I tried to maintain minimum changes compared to last year to try this copper addition, and it seems that it is working. I never had spinaches these big! 

Now, let's go to the recipe. I had to make savory blinis, but some of my guests were allergic to raw eggs. However, I have to make a special mayonnaise for all of us to enjoy the blinis. I found a recipe with cooked eggs that I tried. I have to admit that still I prefer my mayonnaise with raw egg, but this is a good substitute.




Mayonnaise with cooked eggs

4 hard boiled eggs

4 teaspoons of olive oil

2 teaspoons of lemon juice

salt

pepper

water as needed

Optional: mustard, garlic, herbs


In a container, place the hard boiled eggs sliced in quarters. Add the olive oil, lemon, and salt. With an immersion hand blender mix it well, add water as needed to make the consistency you desire. If you wish, then add garlic, mustard or herbs. Use it as real mayonnaise. ENJOY!

Helado de lúcuma cubierto de chocolate

  


Empecé la temporada de helados... ¡el invierno se acabó!... de todos modos no tenemos invierno en el sur de EE. UU.... unos días fríos en enero y febrero, y ahora tenemos flores floreciendo y el clima perfecto para tomar un helado.


Me encanta la lúcuma. La lúcuma es una fruta que crece en Sudamérica, y cuando se come fresca no es tan buena como en postres o helados. ¡El sabor es como crema de caramelo y el color también!

Helado de lúcuma cubierto de chocolate

Natilla

2 huevos

350 gramos de nata (35%)

200 gramos de leche

3 cucharadas de leche en polvo

400 gramos de pasta de lúcuma (la compré lista para usar). Viene con azúcar, por eso no le agregué azúcar a esta mezcla.


Mezclar los huevos, la nata, la leche y la leche en polvo. Colócalo en una olla a fuego medio bajo hasta que espese. Dejar de lado. Una vez frío, mézclalo con pasta de lúcuma. Coloca la mezcla en tu maquina de hacer helados. Distribuirlas en moldes para helado. Congélalo durante 24 horas.

Derretir ambos al baño María a baja temperatura. Cubre cada helado y colócalos nuevamente en el congelador durante 1 hora. ¡DISFRUTAR!





Lucuma ice cream covered with chocolate

 


I started the ice cream season.....winter is gone!....we don't have winter anyway in the south of USA....few cold days in January and February, and now we have flowers blooming and the perfect weather for ice cream.

I love lucuma. Lucuma is a fruit that grows in South America, and when it is eaten fresh is not as good as in desserts or ice cream. The taste is like cream caramel and the color too!

Custard
2 eggs
350 grams of cream (35%)
200 grams of milk
3 tablespoons of milk powder

400 grams lucuma paste (I bought it ready to use). It comes with sugar, that is why I didn't add sugar to this mix.

Mix the eggs, cream, milk and milk powder. Place it in a pot at low medium heat until it thickens. Set aside. Once is cold, mix it with lucuma paste. Place the mixture in your ice cream maker. Distribute them in ice cream molds. Freeze it for 24 hours.
