My favorite sandwich

Sunday was a picnic day. It was a lovely day to go out and have fresh air after a long rainy winter....It was warm, breezy, cozy and a the most relaxing day that I had in weeks......What was for lunch? along with many finger foods, we prepared my favorite sandwich. What has in it? It is up to your creativity, taste, imagination and love for eating a mouthwatering picnic....

I don't know the origin of this sandwich, but it tastes really good.....

Here goes my recipe:
A loaf of bread (or individuals) with a thick crust. It has to have around 5 cms of height.
Mix of cheeses (feta, havarti, aged cheddar, or others as you wish)
Cured meats
Barbecue veggies (eggplant, zucchini, onions, garlic, bell peppers)
Sun-dried tomatoes
Olives (pitted)
Mushrooms (of different kinds). I barbecue them first.
Mayonnaise
Tapenade
Olive oil
Herbs
Anything you wish

Barbecue the veggies (each one separate). Put your mushrooms in a pan with olive oil and herbs. Saute them until tender. Let the veggies and mushrooms cool.

Carefully cut the top of the bread. Remove the soft inner-part of the bread.
Spread mayonnaise in all the interior of the bread, then spread tapenade. Distribute the veggies, cured meats, cheese, mushrooms, olives, and sun-dried tomatoes by layers. Press each layer with your hands.


Once you finish, place the top of the bread, and wrap it with plastic wrap. Leave it in the fridge over night. Cut it in half....and EAT IT!!....a good dry white wine (very cold) goes very well.....
