Simple Spinach Roquette (rugula) salad
I am still exhausted....
In addition, I have been eating too much sweets these days that I have decided that I am going to make a simple, but fulfilling spinach roquette salad.
Here goes my recipe:
2 cups of fresh baby spinach
1 cup of fresh roquette (rugula)
1/4 cup of mayonnaise
1/4 cup plain yogurt (I like Balkan style)
1/2 lemon zest
1 teaspoon Dijon mustard
Artichoke wedges to decorate
Feta cheese to decorate
Wash the spinach and roquette. I like the 2:1 proportion, but you can change it up to your taste. Drain and chop them.
In a mixing bowl, combine mayonnaise, plain yogurt, the zest of half-lemon, juice of 1 lemon, Dijon mustard and fresh oregano. Make a dressing that is creamy. Adjust the thickness with olive oil. Add salt and pepper to your taste.
Mix the greens with the dressing. Serve on a plate, and place feta cheese and artichoke wedges on top. Enjoy!
