What Did She Do with the Red Pepper Olive Oil? (II)


This Extra Virgin Olive Oil (from the Red Bell Peppers) is very tasty to enhance side dishes. Here are some dishes we tried, and we really liked!!

Rice with a Red Bell Peppers Aroma
 


Rice with a Red Bell Peppers Aroma
2 cups of your favorite short grain rice (like calrose)
Extra Virgin Olive Oil (from the Red Bell Peppers)
Salt
3 cups of boiling water

In a rice pot, heat the Extra Virgin Olive Oil (from the Red Bell Peppers)add the rice and salt. Fry the rice for 1 minute. Add 3 cups of boiling water, adjust the salt. Cook with a lid at low temperature, and do not stir the rice. The rice should be cooked in 20 minutes depending on your pot and stove.

This potatoes are very easy to make, and a delicious side dish. This recipe has no proportions, only ingredients.

Beautiful potatoes (I used little ones)
Parmiggiano Reggiano Cheese
Oregano (you can use other herbs as you like)
Cheese for melting like havarti or mozzarella
Salt
Pepper

Wash the potatoes, and cut them in half (don't peel them). Cook them in boiling water with salt until they are firm, but not overcooked. Strain them, and let them cool.
With a spoon, gentle take the cooked potato flesh leaving a hole like a cup. With a fork, mash all the potatoes and add Extra Virgin Olive Oil (from the Red Bell Peppers) with the garlic. Add parmiggiano reggiano cheese, pepper, oregano, and whatever you want to add or change for your taste.
In each potato-cup, place a small piece of cheese (havarti or mozzarella). Fill each potato-cup with the mash potatoes you have prepared. Place it in a oven tray, and put it in a preheated oven at 375F until the cheese has melted (about 12 minutes in my oven).....Enjoy!

Marinated Veggies with Red Bell Peppers Aroma
 


This veggies are very easy to make, and a delicious side dish. This recipe has no proportions, only ingredients.

Beautiful vegetables. I used aubergine, red onion, and yellow pepper.
Oregano (you can use other herbs as you like)
Salt
Pepper

Wash the vegetables, and cut them in pieces. Put them in a big bowl, and coat them with Extra Virgin Olive Oil (from the Red Bell Peppers), herbs like oregano, salt and pepper. Mix the well, and let them marinate for one hour. Place it in a oven tray, and put it in a preheated oven at 375F until they are grilled (about 16 minutes in my oven).....Enjoy!

And finally.......PIZZA!!

I have done many pizzas with the Extra Virgin Olive Oil (from the Red Bell Peppers) , but this is the one that I like the best......

Dough (you can use your own pizza dough)

1/4 cup of warm water
1 teaspoon of sugar
3 teaspoon of dry yeast (I use quick rise)
2.5 cups of flour
3 tablespoon of olive oil
3/4 teaspoon of salt
Cornmeal to dust the pizza stone
Warm water

In a cup, place 1/4 cup of warm water,  1 teaspoon of sugar, and 3 teaspoon of dry yeast. Let it foam.
In a bowl, mix flour and salt. Add olive oil, and the foam. Incorporate warm water in a quantity to have a non-sticky, but firm dough. Place it in a glass bowl and let it rise until is double in size. Make a hole in the middle.

 
 

Let it rise again, until it is double in size.....

With a roller pin, flat the dough in a circle shape. I have a pizza stone, and I try to make that diameter. Put in your preheated stone according to its instructions (usually dust it with cornmeal). 


Place the toppings..........

1 grated tomato already cooked in a pan with Extra Virgin Olive Oil (from the Red Bell Peppers)
Mozzarella and Feta Cheese
Red Onion and Shrimps slightly cooked in a pan with Extra Virgin Olive Oil (from the Red Bell Peppers)
Kalamata Olives
Basil leaves

Cook it for 25 minutes or until done. Enjoy!!
