This is a very delicious, fresh, and aromatic soup. In summer, I use it after meals to refresh, and before a dessert. Nevertheless, it can be served as a dessert as well....
This is a gluten-free recipe; therefore, it is dedicated to all our friends that face a celiac disease.....specially, to Ana and Victor for their wonderful job in creating awareness for this situation....
Strawberry Soup with Aroma
250 grams of strawberries
220 cc of mineral water
1 tablespoon of rose water (gluten-free)
2 teaspoons of sugar (more or less depending of the sweetness of the strawberries)
Put the strawberries, mineral water, rose water, and sugar in a blender. Blend it until smooth.
Mint Foam with a Twist (alcohol)
400 cc cups of water
40 mint leaves
75 grams of sugar
50 cc of mint liquor
1 1/2 gelatine sheets
1 isi charger
Boil the water, sugar, and mint
Mix the water, mint leaves, and sugar. Boil it until reduces to 200 cc. Strain it, and set aside. Soak the gelatine in cold water, and dissolve it in 50 cc of hot water. Mix it with the mint infusion. Add the mint liquor. Put it in an ISI Whipper and follow the instructions. Keep it in the fridge.
Place the strawberry soup in a plate or a glass. Add the mint foam in the middle. Decorate it with strawberries....ENJOY!!
