Pumpkin Gnocchi with Basil and Goat Cheese and Pumpkin Panna Cotta........



I always like to try new dishes for Thanksgiving. These two dishes were surprisingly good, and for sure we will make them again.....

Pumpkin Gnocchi with Basil and Goat Cheese

1 1/2 cup of flour (it can be more depending on the humidity of the potato and the pumpkin)
1 cup of cooked potato
1 cup of pumpkin puree (I used butternut pumpkin)
2 egg yolks
Nutmeg
Olive oil
Butter
1/2 cup of chopped basil
Goat cheese  
Salt

Mash the cook potato. Mix it with pumpkin puree, salt, egg yolks, and nutmeg. Gradually, add the flour and mix it. The dough has to be smooth, and not very sticky. Knead the dough, and shape it in a log form about 2 cms wide. Cut the gnocchi at about 1.5 cms. 

Place them in boiling water with salt until cooked (they will go to the top of the pot). 

In a pan, heat a mix of olive oil and butter. I used 3 parts of olive oil and 1 part of butter. When the butter has dissolved, add the chopped basil. Incorporate the gnocchis, and gently toss them. Serve with pieces of goat cheese and parmiggiano cheese. ENJOY!!


 

Pumpkin Panna Cotta

1 cup of pumpkin puree (I used butternut pumpkin)
2 cups of cream (I used 35%)
4 tablespoons of sugar (more or less depending on the sweetness of the pumpkin)
Cinnamon (powder) ( to your taste)
3 teaspoon of gelatin (powder)
5 tablespoons of cold water

Place the gelatin in a cup with a water. Set aside.

Strain the pumpkin puree to avoid any fiber. Mix the cream, pumpkin pure, cinnamon, and the sugar, put it in a medium heat until start to simmer. Add the gelatin. Cook it for three minutes or until the gelatin is dissolved. Place in glass that are heat proof. Garnish with pistachios and cranberries....ENJOY!!

  1. Hola Marcela! Cuánto tiempo sin pasar por tu cocina pero últimamente el trabajo me trae de cabeza y casi no tengo tiempo para nada más! La panacotta me vuelve loca, loca!!! es uno de mis postres favoritos del mundo mundial. Y esos ñoquis tienen una pinta estupenda!
