Crepes with Greek Yogurt, Goat Cheese, Honey and sliced Almonds with Blueberry Sauce.....To Star 2013 with energy!!

And we are in 2013!.....I hope this year will bring you peace, health, love, job, harmony and stability....

In general, our breakfasts are very simple. Cappuccino and Greek yogurt with honey, a piece of cake, or toast with cheese and mash avocado; however, when I have time.....something different is ur breakfast during weekends:

Crepes with Greek Yogurt, Goat Cheese, Honey and sliced Almonds with Blueberry Sauce


2 eggs 
Pinch of salt 
1  cup of flour 
1 1/2 cup milk (you can use more or less milk depending on the thickness of the batter you wish to have)
Olive oil for cooking

In a blender, combine the eggs, salt, and milk. Add the flour by 1/4 cup and mix it. Let it rest for 30 minutes. Brush a pan with olive oil, and heat it. Stir the batter before using it. When the pan is hot, pour some batter and swirl it to make the crepe. When the crepe is dry, flip it and cook it until is dobe.

200 grams of Greek yogurt
80 grams of soft Goat cheese
3 tablespoons of honey (more or less depending on your taste)
50 grams of sliced almonds

Mix all together and set aside.

Blueberry sauce

As soon as I read this blueberry sauce from Teresa......I had to make it!....I did not use haba tonka because I can't find it here, and Oporto because it was for breakfast.....The sauce is delicious.....Thank you Teresa!!

    Tu desayuno irresistible Marcela. Yo soy de tostada y café, pero a este también me apunto por lo menos una vez a la semana.
