Rainbow Christmas Cookies and Christmas Sweets.....

November....Where you were gone????

November went fast, and for us has been a very tough month. We have had no one, but three snow storms each one of 20-25 cms in a day....very unusual for this period....and we have not arrived to January...we are not in winter yet!!.......We are tired of cleaning snow....

Some Christmas recipes from last year that for sure we will repeat this year!

These cookies are from Hilmar, she made them with hazelnuts, but I made them with almonds.....DELICIOUS!!

And also from Hilmar a Pan de Almendras with Candied Orange peel  it was our breakfast last week!

Also, last year I have made Rainbow Christmas Cookies, which are ideal for their colors. The recipe is from a friend...

Rainbow Christmas Cookies

250 g almond paste 
2 cups all-purpose flour (sifted)
3/4 cup of sugar 
120 grams of butter (room temperature)
4 eggs, separated
1 teaspoon baking powder
2 teaspoons almond extract
Pinch of salt
Green and red color (I used in gel)
Apricot jam
Milk or semisweet chocolate (your preference)

Combine flour, salt and baking powder. Set aside.

In a large mixing bowl, combine the butter, 1/2 cup of sugar, almond essence, and almond paste. Add the egg yolks. Beat until it is creamy and light in color. Add the flour, salt, and baking powder.
Beat egg whites until foamy, and add 1/4 cup of sugar. Beat until is glossy.
Slowly, fold the eggs white in the flour mix. I divided the egg whites in three, and fold it slowly.
Divide the mix in three. To one, you will add red color, to other green color, and the last nothing.
Spread it over parchment paper, in three equal rectangles.
Bake t in a oven at 350F for 8-10 minutes. Do not overcook. The dough has to be just cooked.
When all layers are cool, transfer them to a tray. Place your first layer, and spread on top apricot jam, then the second layer, and again apricot jam, then the third layer. Cover  it with a plastic wrap, and put a tray on top with weight. I used cookbooks. Leave it in a fridge overnight. 

The next day, take the cookies out of the fridge. Melt your favorite chocolate and cover it. Once the chocolate is firm, cut them in squares or rectangles. ENJOY!

For sure I will make them again because they are delicious....
