Gỏi cuốn....Vietnamese Spring Roll.....

I love .Vietnamese Spring Roll.....They are fresh, tasty, easy to make with what we have in the fridge......But.....and a big BUT......they have a trick.......they require to be made over a kitchen towel that has been ironed......and now you will now.....I do not iron!!!!

The first time I made them, I did it over a clean kitchen towel that has not been ironed.....they end up being difficult to properly wrapped because when I took the rice paper out of the water, and placed it over the kitchen towel, it ended up with wrinkles....

I had to overcome my trauma, and for the first time in 20 years, I had to iron a kitchen towel......

Here is the recipe
 Gỏi cuốn
Round rice paper wafers
Lettuce
Mint leaves
Cilantro leaves
Shrimps (cooked and in halves)
Green onions
Carrots (in thin slices)
Red Bell Pepper (in thin slices)
Avocado
Rice noodles

Wash and cut in appropriate sizes the vegetables. Cook the rice noodles, and pass them under cold water. Drain them and set aside.

Soak each rice paper wafer in warm water for a minute. Take it out and place it over an IRONED cotton kitchen towel.

Place herbs, shrimps, lettucce, noodles, carrots, bell pepper, and avocado. You can do a different order.

Fold the sides first, and then wrap it

 And eat it!

I served them with two sauces

Basic Sauce

5 tablespoon rice vinegar
5 tablespoon fish sauce
1 cup of water
1 teaspoon of sugar
1 garlic
Crushed chili
Cilantro leaves

In a pot, place the rice vinegar, fish sauce, water, and sugar over medium heat until sugar is dissolved. Let it cool.

Divided in two portions. Add to one garlic and chili, and cilantro and garlic to the other.

ENJOY!

Besitos
